Our white albacore tuna is troll caught. We choose reliable fishermen who carefully tend to the catch so that the quality is always superior. The tuna is sent to the cannery fresh off the boat to insure the best possible flavor and quality. Then, we also choose a local processor who cans the tuna to our specifications. Jack's Premium Tuna tuna is filleted while the white tuna is still raw, rather than prebaked. It is only cooked once while still in the can. This locks in the delicate flavor and natural juices of the tuna. This process takes a bit longer, but we're sure you will agree that the finished product is superior to the national brands.
