Fresh razor clams are a Pacific Northwest delicacy! Here are some of our favorite ways to prepare them.

Cleaning Your Clams

Before cooking, razor clams must be cleaned. Remove the dark digger, gills, and stomach. Rinse thoroughly in cold water. The meat can then be sliced, chopped, or left whole depending on your recipe.

Classic Fried Razor Clams

The most popular way to enjoy razor clams!

Ingredients:

  • Cleaned razor clams, sliced into steaks
  • 2 eggs, beaten
  • 1 cup flour
  • 1 cup fine breadcrumbs or cracker crumbs
  • Salt and pepper to taste
  • Oil for frying

Instructions:

  1. Pat clam steaks dry with paper towels
  2. Season flour with salt and pepper
  3. Dredge clams in flour, then egg, then breadcrumbs
  4. Fry in hot oil (350°F) for about 30-45 seconds per side until golden
  5. Don't overcook - they should be tender, not rubbery
  6. Serve immediately with lemon wedges and tartar sauce

Razor Clam Chowder

A warming, creamy soup perfect for coastal weather.

Ingredients:

  • 2 cups chopped razor clams
  • 4 slices bacon, diced
  • 1 onion, diced
  • 3 potatoes, cubed
  • 2 cups clam broth or chicken stock
  • 2 cups milk or cream
  • 2 tablespoons butter
  • 2 tablespoons flour
  • Salt, pepper, and thyme to taste

Instructions:

  1. Cook bacon until crisp, remove and set aside
  2. Sauté onion in bacon fat until soft
  3. Add potatoes and broth, simmer until potatoes are tender
  4. Make a roux with butter and flour, add to pot
  5. Add milk/cream and chopped clams
  6. Simmer gently for 5-10 minutes (don't boil)
  7. Season to taste and top with bacon
