What is truffle fudge?
It’s something completely different. It has a silky chocolate center with the consistency of ganache, as well as a chocolate coating, and you may think it’s a truffle. But it’s not. It’s actually fudge, just not like any fudge you’ve tasted before.

John Kelly gourmet truffle fudge is a masterful blend of ingredients that delights the most sophisticated palate, and provides pure pleasure to anyone who simply loves chocolate. While ordinary fudge tends to be monotone in flavor, our truffle fudge pieces are available in seventeen richly complex flavors, each rivaling the finest gourmet dessert.

All John Kelly Chocolate products are hand-made with great attention to detail.
Their specialty is exceptionally delicious chocolates. Using all-natural, premium quality ingredients, and everything is made in small batches. But it’s really all about the level of detail and hand craftsmanship that sets John Kelly Chocolates apart.

When making truffle fudge, for example, it takes no less than 5 people to create each and every piece.

John Kelly Chocolates has experienced cooks who are expert at all the nuances required in making a 150-pound batch as silky and delicious as possible. Once it’s cooked, the fudge then has to be cut, carefully, to be uniform and consistent. It takes two people to coat the chocolate – one to apply a bottom coat and one to enrobe the rest of the piece with high-quality Belgian chocolate. And once it’s enrobed, that same person has to ensure that the piece gets a hand-initialed letter flourish on top, or a sprinkling of salt. Lastly, each piece is cooled and removed from its cooling tunnel by yet another person, who inspects every piece for quality and appearance.

Five people, all working in concert with one goal in mind – to bring you the best piece of chocolate you’ve ever tasted. And this is only the process for truffle fudge.

John Kelly dark chocolate is a full-bodied chocolate that is not bitter but has an incredible depth of flavor, with a cacao content of 86%.
The slightly bitter taste of a walnut is complemented by the slightly sweet taste of the fudge for a perfect combination. John Kelly uses only California grown Walnuts.
